Almond Jelly Chinese Style

2 envelopes unflavored gelatin
4 T. cold water
2 T. sugar
3 T. milk
2 tsp. almond extract
4 cups cold sugar water (4 cups cold water, 1 cup sugar)
1 cup diced fresh or canned fruit


Dissolve gelatin in water; add 2 tablespoons sugar. Add milk and 1 teaspoon almond extract. Stir briskly until thoroughly mixed. Pour into 9x12 glass dish. Place in refrigerator for at least 2 hours or until firm. Remove the chilled jelly and cut into small pieces. Place into individual dessert bowls. Placed diced fruit on top and pour cold sugar water over jelly. Splash with remaining almond extract.
