Catfish Bread



1/2 cup margarine
1/2 cup mayonnaise
6 green onions, chopped
1 (4-oz.) can black olives, chopped
1/2 tsp. garlic powder
2 cups shredded mozzarella and Cheddar cheese mix
1 loaf French bread
4 to 5 catfish fillets
Tony Cachere’s cajun seasoning, to taste
Soy sauce, to taste
Liquid smoke, to taste


Blend margarine and mayonnaise; add onions, olives, garlic powder and cheeses. Mix well. Season catfish fillets with Tony’s seasoning, soy sauce and liquid smoke. Broil 4 to 5 minutes on each side, or until fish flakes with fork. Mash up when done and add to cheese and mayonnaise mixture. Spread each bread slice with mixture. Cover with foil and bake at 350 degrees for 15 to 20 minutes.
