Cheesy Cocktail Muffins



1 cup (2 sticks) butter, melted
8 oz. sharp Cheddar cheese, shredded
2 T. chopped chives (optional)
1 cup sour cream
2 cups self-rising flour
Pinch of salt
Pinch of cayenne pepper
3 slices bacon, cooked crisp and crumbled


Mix the melted butter and cheese in a bowl. Let cool for 2 minutes. Stir in the chives and sour cream. Add the flour and mix well. Stir in the salt, cayenne pepper and bacon. Fill greased miniature muffin cups 2/3 full with the batter. Bake at 375 degrees for 15 to 20 minutes or until a wooden pick inserted in the center comes out clean. Remove to a wire rack to cool. Yield: 18 miniature muffins
