Edna Earle’s Perfect Cheese Straws



1/2 cup butter (room temperature)
4 cups grated sharp Cheddar cheese (room temperature)
2 cups all-purpose flour
1/2 tsp. cayenne
1/4 tsp. salt
1/8 tsp. dry mustard (optional)


Preheat the oven to 275 F. Mix butter and cheese together. Beat well at medium speed with an electric mixer. Sift together the remaining ingredients. Add flour mixture to butter and cheese mixture, blending well. Force mixture through cookie press, using the star tip disc. Make long strips on an ungreased baking sheet; then cut into 2-inch strips. Bake for 20 minutes. Remove from sheets and let cool.
