Mama Joyce’s Hot Sausage Dip



1 roll hot sausage
1 roll mild sausage
6 mushrooms, chopped
1 onion, chopped
3 (8-oz.) pkgs. cream cheese
2 cans Ro-tel tomatoes, partially drained
Scoopable corn chips or tortilla chips


Brown sausage in large skillet, adding mushrooms and onion when meat is nearly browned. Drain meat mixture well. Add cream cheese and Rotel tomatoes to meat on low heat, stirring as needed, until mixture is hot and bubbly. Serve dip in chafing dish with chips. Dip may be made several days in advance, refrigerated and reheated in a microwave when ready to serve.
