4 cups halved orange sections, seeds removed (juice reserved) Meat from one fresh coconut, grated, about 1 1/2 cups (juice reserved) Optional: 2 cups chopped fresh pineapple Optional: 1 cup pitted fresh cherries or drained and rinsed maraschino cherries Confectioners’ sugar to taste


Over a bowl, using a sharp knife, peel oranges, removing rinds and white membranes. Separate oranges into sections and remove seeds. Cut sections into 3 or 4 pieces. Set aside.
