Broccoli Cornbread, Lowfat Version

1 (10-oz.) frozen chopped broccoli, thawed and drained 8 oz. fat-free Cheddar cheese 1 onion, chopped Egg substitute equivalent to 4 eggs 1/4 cup buttermilk 1/2 cup light butter spread, melted 1 tsp. salt 1 box Jiffy cornbread mix


Mix all ingredients except cornbread mix. Add cornbread mix and combine. Pour into a 9-by-13-inch pan sprayed with cooking spray and dusted with corn meal. Bake at 400 degrees for 25 to 30 minutes, or until golden brown.
