Butternut Squash Casserole



1 butternut squash 3 eggs, beaten 1/3 cup melted butter 1/2 cup milk 1 cup sugar 1/2 tsp. coconut flavoring


Split the squash, take out seeds and place into foil-lined pan, cut side down. Bake at 350 degrees for 1 hour. Scoop out squash and mash (you need 2 cups mashed squash). Combine all ingredients. Pour into lightly greased 1 1/2-quart casserole and bake at 350 degrees for 1 hour, or until firm in center.
