Easy Red Beans and Rice

One-Dish Meals


3 slices bacon
2 (15-oz.) cans Van Camps New Orleans-style kidney beans
1/2 cup chopped celery
1 large onion, chopped
1 small bell pepper, chopped
2 tsp. parsley
2 tsp. ketchup
1 (2-oz.) jar chopped pimiento
1 or 2 tsp. chili powder
1/3 cup green onion tops
1 1/2 tsp. Worcestershire sauce
1 (8-oz.) can tomato sauce


Fry bacon and crumble into kidney beans. In bacon drippings, saute celery, onion and bell pepper, stirring frequently, until well wilted but not brown. Add beans and remaining ingredients. Cover and simmer about 30 minutes. Serve over cooked rice. Good with cornbread.

Optional: Cut your favorite sausage into 1-inch sections and prepare according to package directions. Add to bean mixture at end of heating period. Fresh fruit salad goes well with this.
