Almond-Crusted Chicken



3/4 cup dry bread crumbs Coarse salt and freshly ground pepper, to taste 1 1/2 cups sliced almonds, broken into pieces 2 eggs 2 tsp. water 2 whole boneless skinless chicken breasts 2 Tbsp. unsalted butter 2 Tbsp. canola oil


Season bread crumbs with salt and pepper in a medium bowl and toss to mix. Place the almonds into a bowl. Beat eggs and water lightly in a small bowl. Dip chicken in egg mixture, wiping away the excess with your fingers. Dredge in the seasoned bread crumbs until lightly coated. Dip in the egg mixture again. Coat thoroughly with the almonds.
