Cranberry Pork Roast



1 (3- to 4-lb.) boneless pork roast 2 T. olive oil 2 cups red wine 1 cup cranberries, finely chopped 1/4 cup honey 1 tsp. grated orange zest 2 cinnamon sticks 1/8 tsp. each ground cloves and ground nutmeg Salt and pepper to taste


Brown the roast on all sides in hot olive oil in a Dutch oven. Remove from the heat. Whisk the wine, cranberries, honey, orange zest, cinnamon sticks, cloves and nutmeg in a bowl. Season with salt and pepper. Pour over the roast in a baking pan. Cover and bake at 350 degrees for 1 1/2 hours or until cooked through. Remove to a cutting board and let stand for 10 minutes before carving. Yield: 6 to
