Blackened Catfish

Catfish fillets 1/2 cup unsalted butter, melted Cajun spices Lemon juice Lemon slices, for garnish Chopped parsley


Preheat a cast-iron skillet until hot. Dredge catfish fillets in melted butter; place in skillet skin side down. Cook for about 3 1/2 or 4 minutes. Turn fillet, season generously with Cajun spices and cook an additional 3 to 3 1/2 minutes, until edges blacken. Remove to heated serving plate; season with lemon juice and garnish with lemon slices and parsley. Serves 4.
