Congealed Shrimp Cocktail

4 (8-oz.) cans spicy Bloody Mary mix 1 T. prepared horseradish Juice of one lemon 1 T. Worcestershire sauce 1/4 cup ketchup 2 packages gelatin, softened in 1/2 cup cold water 2 cups small salad shrimp (150 to 200 per pound count) 4 to 5 sliced green onions, white and green parts 1/4 cup finely diced white onion 1/2 cup finely diced celery 1/4 cup finely diced salad olives with pimento 1


Blend first 6 ingredients and bring to a simmer over medium heat, stirring to completely dissolve gelatin. Cool to room temperature; add remaining ingredients and adjust seasoning with salt, ground pepper and Tabasco. Mold and refrigerate overnight. To serve, unmold onto a platter of lettuce leaves and garnish with lemon slices and shrimp. Note: This can be made as an hors d’oeuvre serving
