Asparagus With Lemon-Mustard Sauce

2 (1-lb.) bunches asparagus, trimmed 1 cup mayonnaise 2 Tbsp. fresh lemon juice 2 Tbsp. prepared yellow mustard 1 1/2 tsp. sugar


Steam asparagus 5 to 8 minutes in a vegetable steamer. Remove and immediately plunge into ice water. Drain and set aside. Make sauce by combining mayonnaise, lemon juice, mustard and sugar with a wire whisk. Taste and add more lemon juice, if needed. Pour over asparagus. Yield: 8 to 10 servings
