Carrot-Pecan Casserole

3 lbs. baby carrots, sliced 2/3 cup sugar 1/2 cup butter, softened 1/2 cup chopped pecans, toasted 1/4 cup milk 2 lg. eggs, lightly beaten 3 T. all-purpose flour 1 T. grated orange rind 1 tsp. vanilla extract 1/4 tsp. ground nutmeg


Cook carrots in boiling water to cover for 25 minutes or until tender. Drain, let cool slightly and process in food processor until smooth. Put carrots into large mixing bowl; stir in sugar and remaining ingredients. Spoon into a lightly greased 11 by 7-inch baking dish. Bake uncovered at 350 degrees for 40 minutes. Makes 6 to 8 servings.
