Carrot Souffl

Side Dishes


2 pounds carrots, cooked 1 cup finely chopped celery 1 medium onion, finely chopped 3 or 4 green onions, tops and bottoms, chopped 1 Tbsp. mustard 1/2 cup mayonnaise 1 cup crushed crackers 3 Tbsp. butter


Preheat oven to 300 degrees. Mash cooked carrots. Add celery, onions, mustard and mayonnaise. Place into a 9-by-13-inch dish; top with crackers and dot with butter. Bake for 1 hour. Yield: 8-10 servings
