Baked Potato Soup a la Peabody Hotel

2 medium potatoes 1 small onion, diced 6 cups chicken broth 1 cup sour cream 2 slices bacon, cooked, chopped fine 2 oz. Cheddar cheese, grated 1 T. chives, chopped


Bake potatoes at 375 degrees for 45 minutes or until tender. Let cool. Peel and chop potatoes. In 4-quart pot, saute onions until clear. Add potatoes and chicken broth; simmer on medium heat for a few minutes. Remove from heat and add sour cream. Blend in blender or food processor. Season with salt and pepper to taste. Serve soup topped with bacon, cheese and chives.
