Briar Patch Coleslaw

2 to 2 1/2 lbs. cabbage 3 carrots 1 bell pepper 1 onion 1 c. sugar 3/4 c. vinegar 1 1/2 t. salt 1 c. mayonnaise


Shred vegetables, toss them together and pack them into a 2-quart (minimum) container. In a non-reactive pan, simmer sugar, vinegar and salt for 2 minutes; pour hot mixture over vegetables. Cover and chill thoroughly. Stir in mayonnaise. Yield: 2 quarts.


Note: Better the second day. Keeps indefinitely in the refrigerator. Divides conveniently by 3 for a one-third recipe smaller batch. (Tossin
