MSU Edam Corn Bread

3 Tbsp. bacon drippings 1 cup all-purpose flour 1 cup yellow corn meal 1 Tbsp. baking powder 1 tsp. salt 1 cup milk 1 large egg 5 oz. MSU Edam cheese 1/4 cup finely diced green onion 1/4 cup diced red onion


Heat bacon drippings in a 10-inch cast iron skillet for 10 minutes at 375 degrees. Combine flour, corn meal, baking powder and salt in a bowl. Combine milk and egg and stir well; stir into dry mixture just until moistened. Add cheese and onions. Pour in the hot bacon drippings, stir until blended and pour batter into hot skillet. Bake 20 minutes or until done. Remove corn bread from skillet immedi
