Lovely Low-Calorie Lemon Cheesecake

3 Tbsp. graham cracker crumbs, divided
1 (3-oz.) pkg. sugar-free lemon gelatin
2/3 cup boiling water
1 cup 1 percent low-fat cottage cheese
1 (8-oz.) pkg. light cream cheese
2 cups thawed light Cool Whip
1 can reduced-calorie cherry pie filling


Coat an 8- or 9-inch springform pan lightly with nonstick cooking spray. Sprinkle sides with half of the cracker crumbs. Completely dissolve gelatin in boiling water; pour into blender container. Add cottage cheese and cream cheese. Blend at medium speed, scraping down sides, for about 2 minutes. Pour into a large bowl and gently stir in Cool Whip. Pour into prepared pan. Top with pie filling. Sprinkle remaining crumbs around the edge of the pie. Chill until set, about 4 hours.
