Lemony Orzo Salad

Ingredients

1 cup uncooked orzo pasta
1/3 cup diced zucchini
1/3 cup diced red onion
1/3 cup minced fresh parsley
3 Tbsp. fresh basil, or 1 tsp. dried
1 Tbsp. olive oil
3 Tbsp. lemon juice
1 cup diced Roma tomato
1/3 cup (1.5 oz.) feta cheese
2 Tbsp. Kalamata olives, chopped
2 tsp. minced fresh mint
Fresh ground pepper

Instructions

Cook pasta and drain well. In a large bowl, combine orzo, zucchini and onion. With a whisk, stir together parsley, basil, oil and lemon juice; stir into orzo mixture. Add tomato, feta cheese and olives. Toss gently to mix well. Sprinkle with mint and fresh ground pepper.
