Buttermilk Layer Cake

1 cup Crisco
2 cups sugar
3 large eggs
2 1/2 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
2 Tbsp. vanilla, or to taste
1 1/2 cups buttermilk


Preheat oven to 350 F. Grease and flour 3 (9-inch) cake pans. Beat Crisco with electric mixer until creamy. Gradually add sugar, beating well. Add eggs 1 at a time, beating until blended each time. Combine flour, salt and baking soda, and add to mixture slowly. Alternate, beginning with flour mixture, then buttermilk, and ending with flour mixture until all is well blended. Beat at low speed until blended after each addition. Beat at medium speed for 2 minutes. Stir in vanilla. Pour batter into prepared pans. Bake in preheated oven for 22 minutes. (For a 9-by-13-inch pan, bake about 40 minutes.)
  Note: Use frosting if desired, but this cake is delicious served plain.
