Autumn Turkey Chili

Main Dishes

One-Dish Meals

2 Tbsp. vegetable oil
1 lb. ground turkey
1 yellow onion, chopped
1 (14.5-oz.) can diced tomatoes, undrained
1 (15-oz.) can pumpkin
1 (15-oz.) can Great Northern beans, drained and rinsed
2/3 cup chicken stock or broth
2 tsp. minced garlic
2 tsp. chili powder
2 tsp. sugar
1/2 tsp. cumin
1/4 tsp. ground cinnamon
1/4 tsp. ground allspice
1 pinch nutmeg
3/4 tsp. salt
1/4 tsp. pepper

Place vegetable oil in a large skillet over medium-high heat. Add ground turkey and cook until brown, about 5 minutes. When meat is almost browned, drain off any excess fat, return to heat and add onion, cooking just until they sweat. Transfer browned meat and onion to a slow cooker, and cover with remaining ingredients, stirring to combine. Set the cooker to Low, cover and let cook 8 hours before serving. Serves 6.
Optional: Serve topped with plain Greek yogurt and a fine drizzle of real maple syrup for a touch of sweetness.
