Ingredients

1 zucchini, sliced thin
1 (10-oz.) pkg. frozen green beans, thawed and drained
1 green or red bell pepper, sliced thin
1 small onion, sliced thin
2 cups mushrooms, sliced
1/4 tsp. garlic powder
1 Tbsp. parsley flakes
1 tsp. chicken or beef bouillon granules
1 can Italian stewed tomatoes, undrained
Parmesan cheese to taste

Instructions

Preheat oven to 375 F. Coat a 9-by-13-inch baking dish with cooking spray. Layer ingredients in order given. Cover tightly and bake 1 hour.
  Variations: Add 2 small red potatoes, sliced thin, for the bottom layer. Substitute 1 cup sliced carrots for zucchini.
