Apricot Ice Cream Sauce

Ingredients

1 (12-oz.) jar apricot preserves
1/3 cup firmly packed light brown sugar
1/3 cup unsweetened pineapple juice
1 1/2 Tbsp. grated lemon or orange rind

Instructions

Combine all ingredients and stir until sugar dissolves. Serve over vanilla ice cream. Yield: 1 1/2 cups
