Shrimp Fried Rice

Ingredients

1 cup chopped green bell pepper
1 cup chopped celery
3/4 cup chopped onion
1 small garlic clove, chopped
5 Tbsp. margarine
1 small can mushrooms, drained
1 lb. cooked shrimp
4 cups cold cooked instant rice
4 Tbsp. soy sauce
2 Tbsp. chopped pimentos, optional

Instructions

Sauté green pepper, celery, onion and garlic in margarine 5 minutes. Add remaining ingredients and heat thoroughly.
