Roasted Red Pepper Tailgate Dip




1/4 cup mayonnaise
1/2 (12-oz.) jar roasted red bell peppers, drained and chopped
2 tsp. finely grated onion
2 tsp. coarse ground mustard
1/2 tsp. ground red pepper
2 (10-oz.) blocks sharp white Cheddar cheese, shredded (can substitute pepper jack)
Freshly ground black pepper, to taste


Stir all ingredients together. Refrigerate 4 to 6 hours. Serve with crackers.
