Blackberry Peach Cobbler Bars

Breads & Desserts

1 cup butter, softened
1 cup packed brown sugar
1 1/2 cups granulated sugar
4 eggs
1 Tbsp. vanilla extract
1 tsp. baking powder
3/4 tsp. salt
3 1/4 cups flour, divided
4 cups blackberries
4 cups peaches, peeled and sliced
1/2 cup chopped pecans

Cream together butter, brown sugar and 1 cup granulated sugar. Add eggs, one at a time, and beat after each addition. Stir in vanilla. Combine baking powder, salt and 3 cups flour. Gradually add flour mixture to butter mixture and stir just to blend ingredients completely. Spread 3/4 of batter into a greased and floured 9-by-13-inch pan. Sprinkle blackberries on top. Mix remaining 1/2 cup sugar and remaining 1/4 cup flour with sliced peaches. Add peach mixture evenly on top of blackberries. Stir pecans into remaining 1/4 of batter and dollop over peaches. Bake at 350 F for about 1 hour or until golden brown and bubbly. Cool for 1 hour. Cut into 10-12 bars.
