Lunch menu: Chicken or tuna salad

Ingredients

3 to 4 ounces chicken or tuna
Diced onion
Pickles
Pepper
Celery
1 boiled egg, chopped
Light mayonnaise
Lettuce
1 serving whole-grain cracker
1 string cheese

Instructions

Combine chicken, onion, pickles, pepper, celery and egg. Add enough mayonnaise to moisten. Serve over lettuce.
