Ingredients

1/2 cup each: sliced mushrooms, snap peas, carrot matchsticks and onions
1 tablespoon extra-virgin olive oil
Sauteed shrimp, beef or chicken
1/2 cup cooked quinoa

Instructions

Saute vegetables in olive oil. Toss with meat and serve over quinoa.
