Carmelized Cabbage

Side Dishes



1 head green cabbage
2 tsp. extra-virgin olive oil
2 tsp. butter
1/2 tsp. salt
1/8 to 1/4 black pepper
2 tsp. balsamic vinegar


Halve, core and thinly slice the cabbage. In a large heavy skillet over medium heat, heat the oil and butter. When the butter melts, add cabbage. Cover and cook for 3 to 5 minutes, until it starts to cook down, and then remove the lid. Cook the cabbage, turning occasionally (tongs work well), until it starts to brown, about 15 minutes. Add the salt, pepper and vinegar, and cook for about 5 more minutes until nicely browned. Makes 6 servings of 1/2 cup.
