Arroz Con Pollo (Rice with Chicken)

Ingredients

3 1/2-lb. chicken, cut into pieces
1/2 cup vegetable oil
1 large onion, chopped
1 green bell pepper, chopped
1 clove garlic, crushed
2 cups canned tomatoes
1/2 cup tomato paste
1/2 cup water
1/2 tsp. salt
2 bay leaves
1 cup long-grain rice
1/2 Tbsp. vinegar
1/2 lb. fresh mushrooms, sautéed in 2 Tbsp. oil*
1 can canned peas, drained, liquid reserved
1 dozen small stuffed olives
Parsley for garnish

Instructions

In a large skillet, brown chicken pieces in hot oil for about 15 minutes; add onion, bell pepper and garlic during the last 5 minutes. Add tomatoes, tomato paste, water, salt and bay leaves. Cover and cook slowly for 1 hour. Add rice to chicken mixture. Cover and cook 20 minutes, stirring once. Add vinegar, mushrooms, olives, peas and reserved pea liquid. Cover and cook 10 minutes. Discard bay leaves. To serve, on a large platter arrange chicken pieces in the center. Make a border with the rice mixture. Garnish with bits of parsley.
  * May substitute 1 small can mushrooms, well drained and sautéed a few minutes in 2 tablespoons butter or margarine.
