Stovetop Mock Mac and Cheese

1 head cauliflower
2/3 cup heavy cream
3/4 tsp. ground mustard
1/2 tsp. salt
1/4 tsp. garlic powder
1 1/4 cups sharp Cheddar cheese
4 slices deluxe American cheese


Chop cauliflower into small pieces, stem and all. Discard leaves. Boil or steam chopped cauliflower for 10 minutes, until very tender. Drain well. Transfer drained cauliflower to a sauce pot over medium heat, and add heavy cream, mustard, salt and garlic powder. Stirring frequently, bring the heavy cream in the pot to a simmer. Let simmer for 5 minutes. Remove pot from heat and stir in Cheddar and American cheeses, stirring until well combined. Let stand 1 minute to thicken before serving. Serves 4.

Note: Using the American cheese helps bind the Cheddar cheese with the heavy cream, making it easier to mix without the sauce separating.
