White Beans and Shrimp

Main Dishes

Fish and Seafood

2 lbs. dried great northern beans
4 to 6 cups chopped onion
2 to 4 cups chopped celery
2 cups chopped parsley
4 to 6 cloves garlic, chopped
1 Tbsp. thyme
Black pepper to taste
Dash of cayenne pepper
Dash of white pepper
Salt to taste
Chicken stock, enough to cover beans
2 lbs. shrimp, peeled and deveined
4 to 5 cups heavy cream
Hot white rice (not instant)

Cover beans with water and soak overnight, or use quick-soak method.* Drain beans. In a large pot, combine beans, veggies, seasonings and stock. Bring to a boil, reduce heat and simmer, covered, until beans are tender (usually 2 to 3 hours). Add shrimp and cream; simmer until shrimp are pink, about 4 to 5 minutes. Serve over rice.
*Quick-soak method: Rinse beans. In a saucepan, cover beans with 1 inch of water and bring to a boil. Boil for a few minutes, remove from heat and let stand 1 hour. Drain.
