Frosted Banana Bars

1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup sour cream
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 cup mashed ripe bananas

1/2 cup butter or margarine, softened
1 (8-oz.) pkg. cream cheese, softened
4 cups confectioners’ sugar
2 tsp. vanilla extract


Preheat oven to 350 F. Grease a 10 x 15-inch jelly-roll pan. In a large mixing bowl, cream together butter and sugar until smooth and fluffy. Beat in eggs, one at a time. Stir in sour cream and vanilla. Combine flour, baking soda and salt, and stir into batter. Mix in mashed bananas. Pour batter into prepared pan. Bake 25 minutes or until bars test done. Cool before frosting.

Frosting: Cream butter and cream cheese in a mixing bowl. Gradually add sugar and vanilla. Beat well so there are no lumps. (You may need to add more confectioners’ sugar to achieve correct consistency.) Spread frosting over cooled bars. Let frosting set before cutting and serving. Makes 36 bars.
