Poulet d’ Artichoke

One-Dish Meals


2 (14-ounce) cans artichoke hearts
22⁄3 cups cooked chicken breast, diced
2 cans cream of chicken soup
1 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon curry powder
13⁄4 cups sharp cheddar cheese, grated
11⁄4 cups breadcrumbs


Preheat oven to 350 degrees. Drain artichokes and spread in a 9 x 13-inch baking dish. Spread chicken on top. Next, combine the soup, mayonnaise, lemon juice and curry powder; pour mixture over chicken. Top with cheese. Toss breadcrumbs with melted butter and sprinkle over the top. Bake for 25 minutes.
