Sweet Potato Balls

Ingredients

2 cups cooked, mashed sweet potatoes
1⁄3 cup brown sugar
1⁄2 teaspoon orange rind, grated
3 tablespoons orange juice
8 marshmallows (or more)
1 cup coconut, flaked

Instructions

Preheat oven to 350 degrees. In a bowl, combine the first four ingredients. Next, shape potato mixture around each marshmallow and roll in coconut. Place on a baking sheet, and bake for 15 to 20 minutes.
