Honey’s Watermelon Salad

2 tablespoons lemon juice
2 tablespoons honey
2 cups chilled watermelon, sliced
1⁄2 cup fresh mint and basil, chopped and mixed
1⁄2 cup pecans halved
1⁄3 cup feta or goat cheese
Dash of coarse sea salt


In a small cup, stir lemon juice and honey; set aside. Place watermelon in a large bowl, drizzle with lemon honey mixture and lightly toss. Toss in herbs, pecans and cheese. Plate, add a dash of salt and serve.
