Avocado Brownies

1 large avocado
1⁄2 cup unsweetened applesauce
3⁄4 cup Egg Beaters

1 teaspoon vanilla extract
1⁄3 cup honey
1⁄2 cup coconut flour
1⁄3 cup cocoa
1 teaspoon baking soda
1⁄4 cup dark chocolate chips (optional)
Nonstick cooking spray


Preheat oven to 350 degrees. In a food processor, blend avocados, applesauce, vanilla extract and honey. Transfer to a large bowl and whisk in Egg Beaters. Then, add coconut flour, cocoa, baking soda and chocolate chips. Spray an 8x8-inch baking dish with cooking spray and bake for 25 minutes (or a little less for a fudgier consistency). Let cool before serving.
