Sweet Potato & Apple Hash

Side Dishes



1 sweet potato, skinned and chopped
1 apple, chopped
1⁄4 white or yellow onion, chopped
1 cup spinach, chopped (optional)

1 tablespoon extra virgin olive oil
1 teaspoon dried thyme
1/2 teaspoon paprika
Kosher salt and black pepper, to taste


In a medium saucepan, add oil and heat on low/medium heat.  Add sweet potato and spices, then cover, stirring occasionally to prevent burning. Cook until sweet potatoes are fork-tender, about 5 minutes (may add 1 tablespoon water as needed if potatoes are not softening). Next, add the apple and onion, and more oil if needed, and cook down for another 5 minutes. Once all ingredients are soft, add in spinach and cook until wilted. Serve immediately.
