Mississippi Rice Salad

Side Dishes


3 cups cooked rice, cooled
4 hard-cooked eggs, chopped
1/2 cup onion, finely chopped
1/2 cup sweet pickles, chopped
1 (2-ounce) jar pimiento, diced
1 teaspoon salt
1/4 teaspoon ground black pepper
1 cup mayonnaise
1 teaspoon mustard
Lettuce leaves


Blend rice, eggs, onion, pickles, pimiento, salt, pepper, mayonnaise and mustard; chill. Serve on lettuce leaves.

Yields: 6 servings
