No Sugar Added Sweet Potato Casserole

Side Dishes

2 pounds sweet potatoes
1 cup of unsweetened applesauce
4 tablespoons butter, melted
1 tablespoon pumpkin spice seasoning
1 teaspoon salt, or to taste
1 1/2 cups pecans, chopped
Additional salt and cinnamon for topping (optional)

Preheat oven to 375 degrees. Bake or microwave sweet potatoes until done, then cut in half and let cool. Remove skins and set sweet potatoes aside. Add applesauce and peeled sweet potatoes to food processor and mix until smooth. Add melted butter, pumpkin spice seasoning and salt; blend well. Transfer potato mixture to a 9-inch baking dish and sprinkle the top with pecans and optional toppings. Spritz pecans with olive oil for a crunchier topping. Bake 25-30 minutes, until it bubbles and topping has browned. Let cool before serving.
