Makes 8 hamburgers

Ingredients

  • 4 pounds lean ground beef, chuck or round
  • 6 slices bacon, cooked and crumbled, dripping reserved
  • 1 large onion, and cooked in bacon drippings
  • 1 cup crumbled blue cheese
  • 1 tablespoon Cajun seasoning
  • 8 hamburger buns

I do these inside on a flat cast iron griddle pan if I can’t get to the grill.  Before you turn them, make sure they are nicely seared, and flip once. The burgers are thick, so I usually just turn off the cooktop and cover with a lid for a few minutes to let the residual heat finish them off.

Directions

Heat a grill to medium high heat. Lightly oil the grates.

Form beef into 16 patties of equal size, placing on a parchment lined baking sheet as completed. Sprinkle with salt and pepper, (and a touch of garlic and onion powder as desired).

Combine crumbled bacon, cooked onion, blue cheese and Cajun seasoning in a small mixing bowl, tossing together to combine. Place 1 tablespoon of cheese mixture onto each of 8 hamburger patties. Top each patty with a remaining beef patty. Lightly pinch the edge of the burgers, sealing in the cheese mixture.  

Place stuffed hamburgers onto hot grill and cook to desired temperature, 5 minutes per side, turning only once.  

Remove from grill and keep hot until ready to serve. Serve with desired condiments.

Ground beef should be cooked to an internal temp of 165 degrees.
