Caramel Pie

Ingredients

1/2 cup sugar 3 eggs, separated 1 cup sugar 1 cup milk 1 heaping T. flour 1/2 stick butter 1 tsp. vanilla 9-inch pie shell Meringue: 3 egg whites, at room temperature 1/4 tsp. cream of tartar 6 T. sugar

Instructions

Brown 1/2 cup sugar in heavy skillet. Beat egg yolks slightly, then combine with 1 cup sugar, milk and flour. Add the egg-milk mixture to the caramelized sugar very slowly. Cook over medium heat until the sugar dissolves. The mixture will thicken as it cooks. Add butter and vanilla. Pour into a 9-inch baked pie shell. To make meringue, beat egg whites and cream of tartar in medium bowl until soft
