Ingredients

Dry ingredients: 2 cups unbleached regular or cake flour 2 tsp. baking soda 1 Tbsp. corn starch 1/2 tsp. cream of tartar 1 cup light brown sugar (or 1 cup white refined sugar and 1/2 cup brown sugar) 2 tsp. cinnamon Wet ingredients: 4 eggs 1 cup canola oil 1 tsp. vanilla extract 1 cup buttermilk 2 cups grated carrots 1 cup chopped pecans Icing: 2 (8-oz.) pkgs. cream cheese 1 la

Instructions

Preheat oven to 350 degrees. Combine dry ingredients in a bowl and stir well. Combine wet ingredients in a separate bowl and mix well. Pour wet ingredients into bowl of dry ingredients and mix on medium speed for about 2 minutes. Pour into a well buttered and floured 9-by-13-inch cake pan. Bake 1 hour. Let cool. Spread icing on top.
