Coconut/Walnut Cookies

Ingredients

4 egg whites 1 tsp. vanilla extract 1 cup sugar 2 cups flaked coconut 1/2 cup flour 1 cup chopped walnuts

Instructions

Preheat oven to 350 degrees. Beat eggs whites with electric mixer until stiff peaks form. Add vanilla; mix well. Add sugar gradually; beat well after each addition. Beat until stiff and glassy. Gradually fold in coconut and flour. Fold in walnuts; mix well. Drop from teaspoon onto buttered cookie sheet. Bake for about 15 minutes, or until lightly browned. (Do not over brown.) Yields about 2 dozen
