Almond Chicken With Apricot Sauce



1 cup apricot spreadable fruit 3 Tbsp. reduced-sodium soy sauce 2 Tbsp. finely chopped onion 4 tsp. cider vinegar 1 tsp. ground mustard 6 boneless, skinless chicken breast halves 1/2 cup sliced almonds 1 Tbsp. butter, melted


In a shallow bowl, combine the first 5 ingredients; transfer 1/2 cup to a serving bowl and set aside. Dip chicken in remaining apricot mixture. Put in a 13-by-9-inch baking dish coated with cooking spray. Sprinkle almonds over chickens; drizzle with butter. Bake uncovered at 350 degrees for 30 to 35 minutes or until juices run clear. Serve with reserved apricot sauce.
