Barbecue Pulled Pork

Ingredients

1 lb. boneless pork tenderloin 1/2 tsp. pepper 1/4 tsp. red pepper flakes 1 T. canola oil 1 cup diced onion 2 cloves garlic, minced 1/2 cup barbecue sauce 1/4 cup catsup 1/4 cup water 1 tsp. vinegar

Instructions

Heat oven to 350 degrees. Sear the whole tenderloin on all sides in a hot nonstick skillet. Remove from the heat and season with the pepper and red pepper flakes. Cover the tenderloin with foil and bake for 25 minutes. Heat the oil in a medium saucepan and saute the onion and garlic for 5 minutes. Add the barbecue sauce, catsup, water and vinegar.
