Chicken Breasts With Creamy Basil Sauce

Ingredients

2 Tbsp. margarine or butter 1/4 tsp. salt 1/4 tsp. pepper 4 boneless, skinless chicken breast halves 1 Tbsp. all-purpose flour 1 cup fat-free half-and-half 2 tsp. minced garlic 1 large tomato, coarsely chopped 1/4 cup coarsely chopped fresh basil Basil leaves for garnish

Instructions

In a large nonstick skillet, melt margarine over medium-high heat until sizzling. Stir in salt and pepper. Add chicken; cook, turning once, for 8-12 minutes or until juices are clear. Remove from skillet and set aside. Reduce heat to medium and stir in flour. Add half-and-half and garlic, stirring constantly 1 minute or until slightly thickened. Stir in tomatoes and basil.
