Chicken in Lemon Sauce

Ingredients

1/4 cup butter or margarine 4 whole chicken breasts, split, skinned and boned, or 8 boneless chicken breasts, skinned 2 Tbsp. dry white wine 1/2 tsp. grated lemon peel 2 Tbsp. lemon juice 1/4 tsp. salt 1/8 tsp. white pepper 1 cup heavy cream 1/3 cup Parmesan cheese 1 cup sliced mushrooms

Instructions

Melt butter in large skillet over medium heat; add chicken. Cook, turning, about 10 minutes or until chicken is brown and tender. Remove chicken to ovenproof serving dish. Discard butter from skillet. Add wine, lemon peel and lemon juice to skillet. Cook and stir over medium heat for 1 minute. Stir in salt and white pepper.
